Waffles with Blueberries Three Ways

Waffles:

  • 1 cup Sourdough Starter (or ½ cup each buttermilk and flour)
  • 2 Tbsp. flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 egg
  • 3 Tbsp. vegetable oil
  • ⅔ Tbsp baking soda
  • ½ tsp. baking powder

Blueberry cream:

  • 1 c. whipping cream
  • 3 T. blueberry preserves
  • 1/4 c. blueberries

Garnish

  • Fresh blueberries
  • Blueberry preserves

For waffles: combine all ingredients except baking soda and baking powder, mix thoroughly. Add soda and powder and cook in pre-heated, greased waffle iron.

For blueberry cream: blend preserves and blueberries together. Whip cream in a cold bowl until it forms stiff peaks, add blueberry preserve mixture and whip until incorporated.

Layer one waffle with blueberry preserves, a second waffle (I make this one smaller to reveal the bottom layer) with blueberry cream, and top with fresh blueberries.
