Thai Cucumber Salad

Dressing:

  • ¼ c. rice vinegar
  • 3 Tbsp sugar
  • ½ tsp salt
  • 2 tsp toasted sesame oil
  • 2 tsp fish sauce
  • ¼–½ tsp red pepper flakes

Salad:

  • 1 English cucumber
  • 1/2 small red onion, thinly sliced
  • 1 Tbsp roasted sesame seeds
  • 1/3 cup peanuts, chopped

Whisk together dressing ingredients. Set aside.

In a bowl, combine cucumber, onion, and sesame seeds.

Toss with dressing, refrigerate for at least 20 minutes up to 2+ hours.

Top with peanuts and serve.
