6 large shrimp, peeled and deveined.
1/2 c. flour
1/2 c. corn starch
1/2 tsp. salt
1 egg white
3 Tbsp. mayonaisse
2 Tbsp. sweet chili sauce
1 Tbsp. Sambal Oelek (chili paste)
1 green onion (optional)
Heat oil for frying to 350°F.
Mix flour, cornstarch, and salt. Dredge shrimp in egg white and then in flour mixture, coating thoroughly. Add to oil and fry until golden brown. Remove from oil.
For the sauce, mix mayonaisse, Sambal oelek, and chili sauce. Toss shrimp in sauce. Plate and then serve with thinly sliced green onion sprinkled on top.
