Sweet Chili Dipping Sauce

  • 10 to 12 red Thai bird chiles, minced
  • 4 cloves garlic, minced
  • ¼ cup fish sauce
  • ½ cup palm or light brown sugar
  • 3 tablespoons white vinegar
  • 2 tablespoons lime juice

Mix all ingredients thoroughly, re-mixing as needed until sugar is fully dissolved. Refrigerate up to 3 weeks.
