Sweet Chili Dipping Sauce
- 10 to 12 red Thai bird chiles, minced
- 4 cloves garlic, minced
- ¼ cup fish sauce
- ½ cup palm or light brown sugar
- 3 tablespoons white vinegar
- 2 tablespoons lime juice
Mix all ingredients thoroughly, re-mixing as needed until sugar is fully dissolved. Refrigerate up to 3 weeks.
