Sweet and Spicy Glazed Chicken Skewers

Marinade:

  • 1/3 cup + 2 T honey
  • 1/4 cup brown sugar, packed
  • 1/4 cup soy sauce
  • 8 garlic cloves, minced
  • 3 T Sriracha
  • 2 T ground mustard
  • 1 t ginger powder
  • 1/4 t salt

For the Skewers:

  • 2 lb boneless skinless chicken thighs, cut into 1-inch pieces
  • 2-3 scallions, chopped

Combine marinade ingredients in a bowl.  Set aside 1/4 c. for later use.

Marinate chicken 2-3 hours or overnight. 

Skewer chicken, bring marinade to a boil on the stovetop.  While that's happening, grill the chicken, basting with reserved marinade.  

When done, drizzle with boiled marinade and garnish with scallions.
