Slow roasted pork with tomato paprika sauce

  • 2 lbs pork shoulder/boston butt
  • 1 can San Marzano tomato
  • cider vinegar
  • thyme
  • paprika
  • 2 red peppers
  • 1 orange
  • 2 yellow onions

Slow-roast the pork shoulder at 300F for 3+ hours (until done). Pull it to shreds. Combine with the other ingredients, bring to a boil, and simmer on low for 45 minutes.

Serve on sandwiches with provolone cheese.
