Sicilian Pizza Dough

 

  • 125g bread flour (140g for larger pie)
  • 1/2 tsp. salt
  • 1/4 tsp. yeast
  • 2 Tbsp. olive oil
  • 90g water (100g for larger pie)

 


Mix together. Wait 15 minutes to allow gluten to develop. Stretch and fold 5–6 times. Allow to rise another 1 hour 45 minutes.

To cook: Move oven rack to highest location, turn broiler on high. Oil a 14" cast iron pan with olive oil, place on burner. Turn burner on high. Stretch dough in pan, then add sauce and toppings. Transfer to oven for 3 minutes, then move back to burner for 1–2 minutes to finish bottom.
