Ravioli with spinach and quail's eggs

  • Spinach, gently cooked
  • Parmesan, grated
  • Quails eggs, poached (30 seconds in boiling water w/ splash of vinegar)
  • Spinach pasta dough

Mix finely chopped spinach with parm; form into molds.

Fill with poached quail's eggs

Wrap in spinach pasta dough
