Potato Salad with mustard and yogurt
- Potatos (1 lb waxy) cooked and cubed
- 1 red onion
- 1/2 bell pepper
- 2t parsley
- 2t mint
- 1t mustard
- 1/2 t cayenne pepper
- 1 t capers
- 1 c. greek yogurt
- 2 minced anchovy fillets or a bit of fish sauce + salt
- 1/2 cuke
- 1/2 t garlic
Mix the first set of ingredients.
Mix the second set of ingredients.
Combine.
