Pickled Onions
- 1 medium red onion, very thinly sliced
- ½ cup water
- ¼ cup distilled white vinegar
- ¼ cup apple cider vinegar, rice, wine, or additional white vinegar
- 1½ tablespoons honey or other sugar
- 1½ teaspoons salt
- ¼ teaspoon red pepper flakes (optional, for heat)
Place sliced onions in jar. Bring all other ingredients to a simmer, and pour into jar. Allow to cool 20–30 minutes, then cover and refrigerate until needed.
