Pickled Onions

 

  • 1 medium red onion, very thinly sliced
  • ½ cup water
  • ¼ cup distilled white vinegar
  • ¼ cup apple cider vinegar, rice, wine, or additional white vinegar
  • 1½ tablespoons honey or other sugar
  • 1½ teaspoons salt
  • ¼ teaspoon red pepper flakes (optional, for heat)

 


Place sliced onions in jar. Bring all other ingredients to a simmer, and pour into jar. Allow to cool 20–30 minutes, then cover and refrigerate until needed.
