Oak bitters

  • 2 T. oak chips, charred
  • 1/4 t.cinchona bark
  • 1/4 t. cherry bark
  • 1/4 t. cassia bark chips
  • 2 c. 100 proof bourbon
  • 1 c. water

Combine everything but water in a jar. Shake daily, for 2 weeks.

Strain into a jar and put the lid on, reserving the solids. Simmer the solids with water for 10 minutes; place in a separate jar for a week.

Strain the water and combine liquids (discard the solids); let stand for 3 days, then strain and bottle.
