Naan (नान)

  • 2 1/2 cups flour(388g)
  • 1 teaspoon salt (3g)
  • 4 tablespoons melted butter (26g)
  • 1/2 cup sourdough starter
  • 1 teaspoon sugar
  • 1/2 cup + 2 tablespoons lukewarm water about 90 degrees (135g)

Mix starter with sugar.  Mix all ingredients.  Knead.  Rise 1 hour.  Divide into 8 portions.  Roll them out.  

Cook on high heat in oiled cast iron skillet until bubbly (1-2 minutes).  Flip and wait another 1-2 minutes.
