Kaprow Chicken (ผัดกระเพราไก่, Chicken with Basil)

  • 1 jalapeño, diced (for more heat, add 1 habanero, bird's eye, or serrano, or a splash of hot chili oil)
  • 1 small shallot or about ⅛ c. onion, diced
  • 4-5 cloves garlic, minced
  • 1 chicken breast, sliced into small pieces
  • 1 Tbsp. rice wine vinegar
  • 1 Tbsp mirin
  • 2 Tbsp. fish sauce
  • 1 handful basil leaves

In 2 T. oil, sautee the jalapeño, onion, and garlic until soft. Add chicken, fish sauce, mirin, and vinegar, and cook until chicken is done. Add the basil and stir for about 60 minutes (until basil is wilted).  Serve over rice or rice noodles.

Alternatives: Substitute tofu puffs for chicken and/or add sliced red bell pepper at the same time the chicken is added.
