Hummus
- 32 oz chickpeas
- 1/8 c. reserved liquid from chickpeas or to taste (more for a smoother, more liquid hummus, less for a more solid hummus)
- 6 Tbsp. tahini
- Juice of 2 whole lemons
- 6 cloves garlic
- 2 tsp. salt
- 1 tsp. cayenne
- 1 tsp. paprika
- black pepper to taste
- Olive oil and paprika for garnish
Blend together first 9 ingredients until desired consistency is reached.
Garnish with olive oil and paprika and serve.
Flavor can be adjusted easily: consider adding roasted red peppers, olives, jalapeƱos, caramelized onions, dill, pine nuts, etc.
