Hummus

  • 32 oz chickpeas
  • 1/8 c. reserved liquid from chickpeas or to taste (more for a smoother, more liquid hummus, less for a more solid hummus)
  • 6 Tbsp. tahini
  • Juice of 2 whole lemons
  • 6 cloves garlic
  • 2 tsp. salt
  • 1 tsp. cayenne
  • 1 tsp. paprika
  • black pepper to taste
  • Olive oil and paprika for garnish

Blend together first 9 ingredients until desired consistency is reached.

Garnish with olive oil and paprika and serve.

Flavor can be adjusted easily: consider adding roasted red peppers, olives, jalapeƱos, caramelized onions, dill, pine nuts, etc.
