Huevos Rancheros

  • 1/2 c. black beans, canned or soaked and cooked
  • 2 T. adobo sauce
  • 8" tortilla
  • 1/4 c. mexican cheese, shredded
  • 1/4 c. fresh salsa
  • 2 eggs
  • 3 T. guacamole

In large skillet/frying pan heat beans with adobo sauce over medium-high heat.  Set aside.  Place tortilla in pan; cover with cheese and add beans on top.  When cheese has melted, move tortilla and toppings to plate.  Fry eggs to taste; while they are frying, add salsa to tortilla.  Top with fried eggs and guacamole.d
