Duck Sauce

  • 2 tsp. sugar
  • 1½ Tbsp. hot water
  • 3 Tsp. apricot preserves
  • 1 brined plum (pitted)
  • ½ tsp. liquid from plum jar
  • ⅛ tsp. soy sauce
  • ¼ tsp. rice vinegar

Dissolve sugar in water, add apricot preserves and stir. Add the plum, plum liquid, soy sauce and vinegar. Mix thoroughly, let stand 5 minutes, and mix again. Serve.

For a sweeter result, add more apricot preserves. For a tarter result, add more vinegar. 

Refrigerate for up to several months.
