Whisk the pancake ingredients together and allow to rest for 10 minutes. Preheat a nonstick pan at medium on the stovetop.
Mix together the egg ingredients.
Pour 1/2 cup of pancake batter into pan. Cook until the top begins to set (3–4 minutes), then flip over. Coat with egg mixture and allow to cook until that begins to set, then roll up into a tube and slice crosswise into pieces.
Mix sauce ingredients. Dip and eat.
