Cubano Sandwich

For the mojo:

  • Juice of 2 oranges
  • Juice of 3 limes
  • 4 cloves garlic, minced
  • 1 tsp. black pepper
  • 1 tsp. cumin
  • 1/4 c. olive oil
  • 1 tsp. salt

For the pork:

  • 2 lbs. boneless pork ribs

For the sandwich:

  • 1 roll, ends cut off and sliced in half lengthwise
  • Swiss cheese, sliced
  • Pickles, thin sliced
  • Sweet ham
  • Mojo porj

Reserve half the mojo sauce for later.

Marinate boneless ribs in half the mojo for 30 minutes. Preheat oven to 375°F. In a saucepan, sear both sides of the ribs to brown, then roast in oven for 20 minutes. Remove from oven, allow to rest 10 minutes, and slice or shred.

Assemble sandwich: Mustard on both halves of the bread, swiss on both halves, then on the bottom layer ham and pork and baste with reserved mojo. On the top layer sliced pickles. Assemble, and press flat; grill in saucepan until toasted on both sides (press with a bacon press or another pan).
