Calzone (quick)

  • 1 cup warm water, divided in half
  • 2 1/2 tsp. active dry yeast
  • 2 Tbsp olive oil
  • 2 Tbsp sugar
  • ½ tsp salt
  • 3 cups all-purpose flour

Herb butter

  • 2 Tbsp butter
  • 1/2 tsp. dried oregano
  • 2 clove garlic, minced

In a small bowl, mix 1/2 c. water with the yeast and allow to bloom for 5 minutes.

Combine 1/2 c. water, olive oil, sugar, and salt in mixing bowl, then add the bloomed yeast mixture. Stir in 1 c. of flour at a time, then need until smooth. Allow to rest 10 minutes and give a final knead.  Shape into a large rectangle. Cut lattice prongs, add toppings, and weave lattice (alternatively, shape into 2 circles, add toppings, and fold over and crimp).

Melt butter with herbs on stovetop, then brush onto calzone(s).  Bake at 500°F for 10-12 minutes.
