Apple cinnamon bourbon

  • 3 large apples of a sweet variety
  • 2 cinnamon sticks
  • 1 750ml bottle of 100-proof bourbon (e.g. Old Grand Dad 100)
  • 150ml water (2/3 cup)

Skin the apples, core them, and place in a large jar. Add the other ingredients and seal; shake occasionally. After 24 hours, strain and bottle.

If you must age it longer, remove the cinnamon sticks after 1 day (or at most 2), otherwise the mixture will get exceedingly tannic and require months of rest to become tasty again.
