Ancho-cinnamon Kahlua

  • 2 dried anchos, stemmed and de-seeded
  • 1 stick cinnamon
  • 3 cups water
  • 3 cups light brown sugar
  • 1/4 cup instant coffee
  • 4 cups vodka
  • 3 T. vanilla extract

Place anchos, cinnamon, water, sugar, and coffee in a sauce pan. Bring to a boil and simmer for 10 minutes, stirring frequently. Allow mixture to cool, then remove anchos and cinnamon stick. Add the vodka and vanilla and bottle. It's ready to use immediately.
